Nationally-recognised US nutrition expert shares insights with broadcast media.

CARA Harbstreet, a nationally-recognised food and nutrition expert and intuitive eating-registered dietician in the US, has been quoted in a number of news sources lately, claiming that potatoes are America’s favourite vegetable.

She says there are many good reasons for this: "They are delicious, affordable and have a long shelf life. Also, many of the cooking methods are much faster than you think."

Nutritional values are similar across all varieties, she points out, affirming that potatoes provide nearly one third of the vitamin C needed for the day. She also stressed that there is more potassium than twenty most popular fruits and vegetables and potatoes have plentiful plant-based protein and fibre to keep us full.
